Another Recipe

I love this recipe. It's yummy. My kids love it. It doesn't "taste" healthy. I hope you guys try this one.

Vegetarian Pasta Shells

Filling - mix together:
1 package soft tofu (15 oz), mashed
2 eggs, lightly beaten
1 tsp dried parsley
1/2 tsp salt
1 package fresh baby spinach (5 or 6 oz)
1/3 cup grated parmesan
Garlic powder to taste
1/2 tsp nutmeg
1/2 tsp basil
2 cloves garlic, minced
1/4 tsp pepper
1/2 onion, chopped
1 cup grated cheddar

Heat 1 large jar (25 oz) of red sauce until boiling, simmer for 10 min

Cook 1 package large shell pasta, rinse and drain.

Fill pasta with mix, place in caserole dish (or two). Pour sauce over the
top and sprinkle with additional grated parmesan.

Bake 30 minutes at 350 degrees.

This is a double batch, so it makes a lot. I almost always make it double
because otherwise I have a half package of tofu I won't use. It freezes
well and makes great leftovers.
