Recipe for the week!

I thought I'd try something new on our blog. I'm going to post a recipe that I love every week. We all know how much I love to cook. I just thought I'd share with anyone who might be interested. I thought I would start out with one of my staples. Whenever I need to make cookies for someone, I make these. Everyone loves them! I have to make them only for the purpose of giving away, however, or I will eat the entire batch! (I'm really not kidding) Here it is:

CARROT COOKIES
1 cup shortening
¾ cup sugar
1 cup mashed carrots
1 egg
1 tsp. vanilla
2 cups flour

GOLDENGLOW GLAZE
juice ½ orange
grated peel 1 orange
1 Tbls. butter
1 cup powdered sugar

Preheat oven to 350˚.

In a bowl combine the shortening and sugar, cream until smooth and fluffy. Add the mashed cooked carrots, egg and vanilla. Mix well.

In a separate bowl, mix together the flour, baking powder and salt until there are no clumps.

Carefully add the flour mixture to the sugar mixture. Do not over mix. The batter should be soft and sticky.

Drop batter by the spoonful onto a grease baking sheet. Bake for 20 minutes, until the bottoms are just about to brown.
