"Nothing would be more tiresome than eating and drinking if God had not made them a pleasure as well as a necessity. " ~Voltaire
YUM-O! I love taco pizza. It sounds so wrong, mixing Italian and Mexican, but this is SO GOOD! I buy the dough usually at Winco. The deli makes it there fresh everyday and it comes in a little ball for a buck. SO worth it. It's good too.
Pizza dough
1/2 can refried beans
Taco Sauce
pepperjack cheese, grated (just a little bit, like 1/8-1/4 cup)
1 lb. hamburger
taco seasoning
1/2 cup finely crumbled tortilla chips
lettuce, cut up very small, shredded is nice
tomatoes diced very small
cheddar cheese
Cook the meat and while it's cooking, chop it up with a spatula into VERY small pieces-- the consistancy of Taco Bell meat. It takes patience, but is worth it! Add the Taco Seasoning according to directions. Roll out the dough on a pizza pan with a bit of cornmeal underneath. Spread on the Refried Beans. Spread on Taco sauce, as much as you desire. Add only the pepperjack. Add the meat. Bake at 425 for 15-20 minutes. Check to make sure the underside of the crust is cooked. When it's done, add lettuce, grated cheddar cheese, tomato. It's always good to have extra taco sauce to add on top if you want. MMMMMMMMM!
